November is cold and dark early. Thukpa, the noodle soup eaten in Nepal's hills and by Tibetan communities, is one of the easiest ways to warm up, and most of it is in any Croatian supermarket.

Ingredients for 2: 150 g noodles (tjestenina, thin spaghetti or Chinese egg noodles), 1 carrot (mrkva), a handful of cabbage (kupus), 1 onion (luk), 3 garlic cloves (češnjak), thumb of ginger (đumbir), 1 tomato (rajčica), 700 ml stock or water, oil, salt, pepper. Optional: chicken (piletina), egg (jaje), chilli (čili), lemon (limun).

1. Heat 1 spoon of oil. Fry chopped onion, garlic and ginger for 2 minutes.

2. Add the tomato and spices (cumin and turmeric if you have them) and cook 3 minutes. 3. Add the carrot and cabbage, then the stock, and boil 8 minutes.

4. In another pot boil the noodles for the time on the packet, drain, and put in bowls. 5. Pour the hot soup over, add a squeeze of lemon and chilli, and eat at once.

What to do: add a boiled egg or fried chicken for a full dinner, and keep cooked noodles separate if you want leftovers, or they turn soft. Do you add extra chilli? Tell us how you make it. More winter food: sel roti for Tihar and 15-minute dal bhat.
